INGREDIENTS

Semolina 250 gms (Rava)
Butter / Margarine 125 gms
Egg yolks 10 Nos.
Castor sugar 500 gms
Cashewnuts ΒΌ cup
Rose Water 2 tbsp
Honey 2 tbsp
Nutmeg powder a pinch
Lemon rind a pinch
Ground cinnamon powder a pinch

METHOD

  1. In a bowl soften the butter/margarine add in the sieved semolina, beat the egg yolks and sugar separately until creamy and frothy.
  2. Mix the egg mixture and semolina mixture add in the chopped nuts, spices, honey, rose water, lime rind, cinnamon powder and mix well altogether.
  3. Pour this mixture into a greased and lined cake tin of your choice and bake at 150 C/ 300 F for approx 25-30 mins, or until nicely brown and well cooked.
  4. Remove demould the cake, cool slice and serve as a desert.
