Mixed
vegetables with pineapple in a mayannaise based salad dressing! |
INGREDIENTS:
Carrots - 2 medium sized diced & boiled
Peas - boiled half cup
Beans - 8-10 nos diced & boiled
Potatoes - 2 nos diced & boiled
Pineapple - 8 sllices diced
Mayonnaise sauce - 1 cup
Lime Juice - 1 tsp
Salt - to taste
Lettuce leaves - 1 bunch
Boiled Eggs - 3-4 nos chopped/diced (optional)

METHOD
- Boil all
vegetables as specified
- In a bowl
beat the mayonnaise well, mix in all the boiled and cooled vegetables
and pineapple cubes.
- Add lime
juice and salt to taste. Mix well and chill
- Just before
serving, arrange lettuce leaves on a salad platter and arrange
the salad and serve chilled
